Solar Drying

Tambo Quinde employee Leo de la Cruz spreads a small initial picking into the solar dryer, beginning the production season, late June, 2016. Solar drying is not only ecological but allows for the development of complex flavors as the beans dry in about a week. If the rain continues and drying takes too long, we also finish some of our micro-lots in a mechanical dryer. In all that we do, practicality and common sense are values we hold dear.
